Blinis with salmon, crème fraîche, and green asparagus

Treat yourself and your guests with some simple but delicious blinis. Serves 4 people.

Blinis

  • 150 g all-purpose flour
  • ½ tsp flaky salt
  • 1 tsp baking powder
  • 2 eggs
  • 1 dl milk
  • 1 tsp honey
  • 65 g melted butter
  • 2 pieces of fresh salmon
  • 1 bunch of green asparagus
  • 4 tbsp crème fraîche 38%
  • Fresh dill
  • Optional: roe

Method

  • Combine the dry ingredients for the pancake batter in a bowl.
  • Whisk in eggs, milk, and honey.
  • Add the melted butter and mix the batter well.
  • Heat up the plancha.
  • Brush the griddle with oil.
  • Cook the salmon pieces with the skin side down. Allow the salmon to cook until it begins to firm up and lighten in color. You can cover it for a few minutes. Flip them over at the end and cook for 1-2 minutes on the other side.
  • Cook the blinis alongside the salmon. Use a ladle to make small, fine pancakes.
  • Arrange the cooked blinis on a platter. Garnish with small pieces of salmon, a dollop of crème fraîche, fresh dill, and optionally, a bit of roe.
