Blinis with salmon, crème fraîche, and green asparagus
Treat yourself and your guests with some simple but delicious blinis. Serves 4 people.
Blinis
- 150 g all-purpose flour
- ½ tsp flaky salt
- 1 tsp baking powder
- 2 eggs
- 1 dl milk
- 1 tsp honey
- 65 g melted butter
- 2 pieces of fresh salmon
- 1 bunch of green asparagus
- 4 tbsp crème fraîche 38%
- Fresh dill
- Optional: roe

Method
- Combine the dry ingredients for the pancake batter in a bowl.
- Whisk in eggs, milk, and honey.
- Add the melted butter and mix the batter well.
- Heat up the plancha.
- Brush the griddle with oil.
- Cook the salmon pieces with the skin side down. Allow the salmon to cook until it begins to firm up and lighten in color. You can cover it for a few minutes. Flip them over at the end and cook for 1-2 minutes on the other side.
- Cook the blinis alongside the salmon. Use a ladle to make small, fine pancakes.
- Arrange the cooked blinis on a platter. Garnish with small pieces of salmon, a dollop of crème fraîche, fresh dill, and optionally, a bit of roe.
