French Toast with Coconut Yogurt and Fried Caramelized Pineapple

Alwaya a great breakfast dish for the whole family.

Coconut Yogurt

  • 2 dl Greek yogurt
  • ½ dl coconut cream
  • ½ dl coconut flour

French Toast

  • 2 eggs
  • 1 dl milk
  • ¼ tsp vanilla powder
  • 2 tbsp cane sugar
  • 4 slices of white bread

Caramelized Pineapple

  • 1 pineapple
  • Cane sugar, about 1 tbsp per slice of pineapple
  • 50 g melted butter

Oil for frying

Method

  • Mix the Greek yogurt with coconut cream.
  • Toast the coconut in a dry pan until it turns golden.
  • Sprinkle the toasted coconut over the yogurt and chill for later.
  • Whisk the eggs with milk, vanilla powder, and cane sugar.
  • Pour the egg mixture into a small dish and soak the slices of bread in it.
  • Cut the top and bottom off the pineapple.
  • Stand it upright and peel it with a sharp knife from the top down.
  • Cut the pineapple in half and then cut each half into wedges.
  • Heat up the plancha (griddle).
  • Brush the griddle with oil.
  • Brush the pineapple wedges with butter and place them on the griddle.
  • Sprinkle each pineapple wedge with ½ tbsp of cane sugar. Let them fry for 1-2 minutes and then flip them. Sprinkle the other side with ½ tbsp of sugar and continue to fry until they caramelize.
  • Fry the bread next to it for 1-2 minutes on each side.
  • Serve the fried French toasts with caramelized pineapple and coconut yogurt.
