Grilled Honey and Balsamic Glazed Strawberries with Vanilla Parfait

Something sweet on the grill always end a perfect meal. Serves 4 people.

Vanilla Parfait

  • 60 g sugar
  • Seeds from ½ a vanilla pod
  • 4 egg yolks
  • 4 dl whipping cream

Strawberries

  • 3 tbsp liquid honey
  • 3 tbsp balsamic vinegar
  • 800 g strawberries
  • Fresh mint for garnish

Method

  • Put sugar and vanilla seeds in a mixing bowl.
  • Add egg yolks and whipping cream and whisk everything together until light and fluffy using a hand mixer.
  • Whip for about 5-6 minutes until it has the consistency of lightly whipped cream.
  • Place the parfait in a freezer-safe container and freeze for 4-5 hours. It’s best made the day before. Simply take it out 10 minutes before serving.
  • Mix honey and balsamic vinegar together.
  • Rinse the strawberries and remove the stems.
  • Pour the balsamic and honey mixture over the strawberries and let them marinate for half an hour.
  • Heat up the plancha (griddle).
  • Brush the griddle with oil.
  • Carefully place the strawberries on the plancha. Be careful as the glaze may splatter when it hits the griddle.
  • Turn them well on the griddle.
  • Grill the strawberries until they caramelize and get some color.
  • Transfer them to a dish.
  • Serve the grilled strawberries with the vanilla parfait and fresh mint.
