Grilled Watermelon Salad with Feta

A nice summer salad to supplement your proteines. Serves 4 people.


  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • Freshly ground pepper


  • ½ large watermelon
  • 40 g pine nuts
  • 200 g feta cheese
  • 75 g arugula
  • 1 handful of fresh basil
  • 1 handful of fresh mint

This is the way to make it…


  • Mix olive oil with balsamic vinegar and season with freshly ground pepper.
  • Peel the watermelon and cut it into medium-sized pieces.
  • Crumble the feta and rinse the arugula.
  • Heat up the plancha (griddle).
  • Brush the griddle with oil.
  • Grill the watermelon pieces for 5-6 minutes on high heat until they have a golden surface. Turn them regularly during the process.
  • Toast the pine nuts very briefly next to the watermelon.
  • Place arugula on a large platter.
  • Add the grilled watermelon pieces on top. Sprinkle with feta and toasted pine nuts, garnish with fresh herbs, drizzle with the dressing and serve immediately.
